Hot If you're sensitive to pungent peppers, this is a milder Jalapeo with all the flavor, but not nearly as warm. Developed by Texas A & M University, this variety is tolerant to potato virus Y. The fruits change from deep green to bright red at maturity, and they should be picked green for mildest taste. Use them in salsa, sauces, pickling, or any dishes that normally call for hot jalapeos.
